Serves: 4 as entree / 8 as appetizer
Ingredients:
- 1 lb shrimp (26-30, peeled and deveined)
- 2 cloves of garlic
- 1/2 tsp. red pepper flakes
- 1/4 tsp. paprika
- 1 tbsp. butter
- 1 cup grape tomatoes halved
- 1 tbsp. lemon juice
- 2 tbsp. Hank's Heat
- 1 tbsp. chopped chives
- Salt and pepper to taste
Preparation:
- In a medium bowl combine shrimp, garlic, red pepper flakes, paprika, and Hank's Heat. Let marinate for 10-15 mins
- Melt butter in large skillet over medium heat. Add shrimp and lemon juice, cook until shrimp are cooked through.
- Remove shrimp from pan and add tomatoes to remaining sauce. Sauté for 2 mins.
- Add shrimp back to pan to heat, season with salt and pepper, garnish with chives.
- Serve with rice for an entree or crostinis for an appetizer.
