Tomatillo Salsa

Ingredients:    

• 4 tomatillos diced
• 2 ears of corn cut from the cob
• 2 small sweet peppers diced 
• 1 tablespoon of fresh ginger finely diced
• ¼ cup of Cilanktro Hank Sauce
• 1/8 cup olive oil
• 1 tbsp. of Hank Dry Rub seasoning
• 1 lime juiced
• 4 garlic cloves finely minced

Preparation:

1. Mix all ingredients in a medium mixing bowl and allow approximately one hour to chill.
2. Serve with chips (blue corn is a great option!) or load up some fresh tacos!
