INGREDIENTS
1 cup leftover pulled pork
2 8.5 oz boxes of Jiffy muffin mix
2eggs
⅔ cupmilk
Hank Sauce (we used Hank’s Heat)
Your favorite BBQ sauce
DIRECTIONS
Preheat oven to 400
Mix together the cornbread mix, eggs, milk, and 1-2 tablespoons of Hank Sauce in a large bowl. Set aside and let rest for 5-10 minutes
Mix pulled pork with Hank sauce and bbq sauce to ensure it does not dry out while baking
Line cupcake tray with baking cups and fill a little less than half full with muffin mix. Top with 1-2 tablespoons of pulled pork then top with remaining muffin mix. Bake per package instructions.
Serve while hot. Makes 12-14 muffins.
