Pulled Pork Stuffed Cornbread Muffins

INGREDIENTS

  • 1 cup leftover pulled pork

  • 2 8.5 oz boxes of Jiffy muffin mix

  • 2eggs

  • ⅔ cupmilk

  • Hank Sauce (we used Hank’s Heat)

  • Your favorite BBQ sauce

DIRECTIONS

  1. Preheat oven to 400

  2. Mix together the cornbread mix, eggs, milk, and 1-2 tablespoons of Hank Sauce in a large bowl. Set aside and let rest for 5-10 minutes

  3. Mix pulled pork with Hank sauce and bbq sauce to ensure it does not dry out while baking

  4. Line cupcake tray with baking cups and fill a little less than half full with muffin mix. Top with 1-2 tablespoons of pulled pork then top with remaining muffin mix. Bake per package instructions. 

  5. Serve while hot. Makes 12-14 muffins.
